On February 15, the Canterbury Court Annual Board of Trustees’ meeting was held in the Community Room. This meeting highlights the operations of Can-terbury Court for the past year. Almost 100 were in attendance and included our Board of Trustee members and their spouses, our Trustees Emeritus members and their spouses, the Rectors and Vestry members of our two sponsoring churches and their spouses, Resident Council Executive Committee members and past Presidents of the Council and their spouses, and the salaried staff.
After the meeting, everyone was in-vited to enjoy a cocktail buffet prepared for our guests by Chef Rodney and his staff, which was spectacular! It included two carving stations with roasted beef ten-derloin and turkey Diablo, sushi, shrimp with cocktail sauce, miniature lobster rolls, wild boar cranberry sau-sage wrapped in puff pastry, an assorted cheese and fruit platter, hot spinach and artichoke dip, chicken skewers with yellow peppers, couscous salad and des-serts consisting of tequila lime squares and bananas foster prepared at an action station. It was a feast fit for a king or queen!
